Jhunka (A Maharashtrian dish):

Mix 4 cups water, 1 tbsp oil, and 1 cup gram flour (besan) in a bowl. Mix well with hands to break all the lumps. In a pan, heat 4 tsp oil, and add 1 tsp mustard seeds. After they crackle, add 1 tsp cumin seeds, 1/2 tsp asfoetida (hing), and 1 tsp turmeric powder. Add 1 finely chopped onion. Now pour the water and gram flour mixture in it. On a medium flame, let it cook till a desired consistency is achieved. Jhunka is not a runny liquid but is just thick enough to serve in a plate. Now cover with a lid and let cook for 2 minutes. Serve hot with Bhakri, or Chapati.
