God Shankarpalya (Sweet Para)
(All ingredients are underlined)
Mix 1 cup milk, 1 & 1/2 cup sugar, and 1 cup ghee (clarified butter) in a vessel and bring to boil. When it cools a bit and is warm, add 1 tbsp besan, 1 tsp rawa (sooji), a pinch of soda (sodium bicarbonate), and as much maida as it can accommodate to make a dough. The dough should not be very soft. It should be just like the dough used to make puris.
Divide the dough into about 3" big parts and roll them into balls. Roll one ball on a rolling board and make a big thick (1/2 cm) circle. With a cutter or a knife, cut into uniform squares. Heat oil in a pan and deep fry all the cut squares, on a low to medium flame, till you get a light pink color. Repeat with all the dough balls.
